Will we lose our Google rankings?

Not if the migration is done properly — every URL with history gets a permanent redirect to its new equivalent, and search traffic is monitored after cutover.

Can this be done without downtime?

Usually — a staged cutover keeps the current system live until the new one is verified. Where a short switchover window is unavoidable, it's planned and agreed in advance.

What if we just need the old system kept running for now?
